Jalapeno Popper Mummies


Happy All Hallows Eve! Just one more day away from a night of spooky horrors. I will be working, but I hope everyone has a fun and safe Halloween, especially those trick-or-treaters.


Tell me why adults and teenagers are trick-or-treating now? When did it become so popular? I remember kids used to say that they were too old for trick-or-treating. But I guess who can really pass up free candy and a night of hanging out with your friends. Me personally, I enjoy passing out candy to the little kiddies coming by. There's something so exciting and gleeful about little werewolves and superheros ringing the doorbell and shouting "Trick or treat," particularly the little pumpkin babies.

Maybe I'm just getting old, but I like it's nice to decorate a home to celebrate the festivities. There are definitely days when I'm not in the spirit, specifically those days when I left the house before the sun rose and came home long after the sun set. But when I see my jack-o-lantern with his toothy grin chomping on a tiny pumpkin, I can't help but smile. I'll attach a photo so you guys know what I'm talking about. I turned my innocent little pumpkin into a cannibal.

Alright, with Halloween being less than 12 hours away, I am sharing my final Halloween themed snack recipe: Jalapeno Popper Mummies!


I debated baking these guys in puff pastry vs. crescent rolls and ultimately went with the crescent rolls. But feel free to use whichever you'd prefer. Also I did not do this, but I wish I had. A great addition to this would to make a garlic butter glaze to brush over the jalapeno poppers to get some extra flavors and color. Enjoy and only share if you want to!


 

INGREDIENTS:

  • 10 jalapeno peppers; halved lengthwise, pitted, and seeded

  • 8 oz. cream cheese; room temperature*

  • 8 oz. jack cheese, shredded

  • 1 green onion/scallion, diced

  • a dash of salt

  • 1 refrigerated crescent roll tube

  • candy eyeballs (purchased mine at Safeway)

For the glaze:

  • 1 garlic clove, chopped

  • 1 Tbsp butter, melted

  • 1/4 tsp salt

*I found that whipped cream cheese is a lot easier to work with.


INSTRUCTIONS:

  1. Preheat the oven to 400°F.

  2. In a bowl, mix the cream cheese, jack cheese, diced scallion, and salt until well combined.

  3. Open the crescent roll package and separate the rolls into four rectangles along the perforated lines, each rectangle should consist of two triangles with a diagonal perforation. (For an extra step, you can roll out the rectangles to merge the perforation and have longer pieces). Slice each rectangle into 10 slices, lengthwise.

  4. Fill each jalapeno half with the cream cheese mixture.

  5. Wrap the filled jalapeno halves with the sliced dough. Remember to leave a gap for the eyes.

  6. Mix the minced garlic, melted butter, and salt together for the glaze. Gently brush the glaze over the wrapped jalapeno poppers.

  7. Bake in the oven for 8-10 mins. Remove from the oven. Place eyes on the poppers to make little mummies! If you found you leave a space to press the eyes, use a bit of cream cheese as your "glue". Serve hot and enjoy!
